You may be able to find pepper spray that also comes with a training aid that is filled with water. The aid is identical in size and activation to the actual spray, but can be used in training in order to prevent getting the spray on yourself. If you cannot find this type of spray, then you will need to buy two identical cans, one for training and one for self defense.
You should always train outside where there is plenty of fresh air. The wind should be at your back. Attach a paper target to a tree and practice opening the lid of container and spraying the target. Work until you are able to do this smoothly. You do not have to initially try for speed but for accuracy.
Hold the container firmly cupped in your fingers and use your thumb to flip the cap open. Use your thumb or your trigger finger to press the button to activate the spray that is aimed at the paper target. Continue doing this until you can accurately open the container and hit the target.
When you spray step aside and back. This will keep the spray out of your eyes and move you out of the way of the attacker.
